I challenged myself to menu plan and follow through with eating vegetarian for a few days in a row, instead of scattering a vegetarian day between meat, pork and poultry days. Per the diet we loosely follow, a frankenstein DASH/Mediterranean/MIND plan, we have already cut red meat down to one-two days a week and we reduced processed carbs. We like red meat and do not intend to cut it out of out diet entirely. I also love pasta and a tangy fresh sourdough, never giving that up either.
The health evaluation results of eating less red meat have been amazing. Reduced blood pressure and better GFR* score. So, if you can’t full-ass a health plan, you sometimes can still see significant benefits half-assing healthier eating.
Today wrapped up four days of lacto-ovo vegetarian eating. Pretty proud.
Day One: Main meal – Big Ass Salad with dressing, croutons, feta cheese and dried cherries.
Day Two: Main meal – Stuffed Squash (with wild rice and goat cheeses) and Tortellini soup.
Day Three: Main meal – French Toast, eggs, fried potatoes.
Day Four: Main meal – Big Ass Salad with a goat cheese vinaigrette and a goat cheese green bean and asparagus casserole. Tons of fruit.
Tomorrow is steak and taters.
