Series – Future Self Journal – 21 – We Have Indian Food at Home

A sentence I said to The Sps last night, after we were musing about stopping at a local South Asian restaurant in a nearby city. Which kicked off a convo regarding how odd it was for me to say that in the first place, and how far we both have come from our upbringings of canned soups, canned veggies and boxed pasta meals.

I have Indian food at home. Not only do I have packaged meals: Pindi Chana, Thai Peanut Bake and Jasmine rice, but I have a batch of my beloved Chicken Tikka Masala I quad prep and freeze in batches. I also have a huge burlap bag of basmati rice from Costco I buy 2-3 times a year.

In the cupboard I have an entire shelf dedicated to Asian cuisine. Rice noodles, rice vinegar, sesame oil. In the fridge I have a jar of lemon grass; in the summer I grow fresh in my herb spiral. I keep a nub of fresh ginger around. I have some galangal coins frozen for use, as well Thai chilis from my garden when I want to make my Hot and Sticky Thai Noodles.

Kid me would not recognize current me.

3. Having the means to shop for groceries and warm home to bring them home to.
4. Successfully not late night snacking! It’s my biggest challenge and I need to celebrate the daily success.
