Menu This Week – Mother’s Day – First Harvest Menu!

I have some green onion that overwintered and is ready to pick! YES I’m excited about it!

I shop on Thursday, so my menu planning is always Thursday through Wednesday. I list primary meals, my lunch is generally tuna fish sandwiches or chicken tikka masala. It’s an addiction, masala every day. It’s a goal of mine to start every day with a fruit or veggie so often I’ll have cauliflower or a clementine.

Beverage is generally water, iced tea (half sweet) or Sunny D.

Thursday – BLT, fresh raspberries.

Friday – Vegetarian burritos. Yellow rice, corn, tomato, sweet peppers and poblano, avocado, refried beans and cheddar jack cheese.

Saturday – Steak (Wagyu sirloin) with roasted veggies. Broccoli and asparagus. Fresh fruit – kiwi. Maybe a Mediterranean potato salad.

Sunday Mothers Day – Potluck! I am bringing a cold chicken salad made with my harvested onions and buns. Also making a veggie pasta salad stocked full of carrot, pepper, cauliflower, radish and broccoli. Kiddos bringing blueberries, brownies and crackers.

Monday – Corndogs and french fries. Healthy stuff HA~ Sometimes I’ll just have masala instead and feed this crap to my family. It’s a favorite!

Tuesday – Spaghetti with meat sauce.

Wednesday – Scrounge! The family fends for themselves. Leftovers, canned items or sandwiches mostly.
