Another Favorite Pepper – Criolla De Cocina

There are very few peppers I would describe as “smoky” or “rich”. The flavor of this pepper hits both notes. It is considered a sweet pepper as it has no heat, yet I would not say it is sweet like a Jimmy Nardello or Melrose pepper.

This pepper takes longer than most sweet peppers to ripen. Regarding timing in USDA zone five or lower, I recommending starting this pepper when you start your hot peppers to ensure you have some fully ripe Criolla peppers ready to taste by frost. This pepper is very pretty and has signature deep grooves. It’s a pepper you can expect to find spiders and cocoons within the folds.

These seeds are a tad fussier, again more like a hot pepper, taking a bit longer to germinate. Once the seeds germinate, the plants are strong and hearty. These peppers went through my four day hardening process easily.

This pepper is a must grow for me every year.
